Assistant Professor Ibtihal Ismail Mohammed, the faculty member from the Department of Home Economics at the College of Education for Women, has participated in the 8th International Genetics and Environment Conference held by the Iraq Association of Genetic and Environmental Resources Conservation (AGERC-Iraq) in cooperation with the Ministry of Environment, Al-Nakhla Non-Governmental Organization, the General Commission for Scientific Agricultural Research in Syria and the Faculty of Environmental Sciences at Al-Qasim Green University in Babylon with research paper derived from a master’s thesis of the Student Sura Saleem al-Saadi from the Department of Home Economics and that is entitled “The impact of adding natural Gelatin extracted from Chia seeds in the specific properties of laboratory-manufactured jelly undertaken under her supervision.

The study highlighted Chia, as a species of flowering plant in the mint family type that is used for medical purposes and as a food since ancient times for its health benefits, its uses in cooking and its importance in the prevention of heart disease, also it is a rich source of protein and fat with a high percentage of polyunsaturated fatty acids. The lecturer aimed to identify the effect of the addition of natural Gelatin derived from chia seeds on the microbial, chemical, sensory and storage properties of laboratory-manufactured jelly.
