Prof. Dr. Alaa Nafi Jassim, the director of the Center for the Revival of Arab Scientific Heritage at the University of Baghdad has organized a panel discussion entitled (Food Etiquette in the time of Caliphs) in which she talked about the fact that food etiquette has original roots dating back to the era of the Holy Prophet Muhammad (peace be upon him) as he was never flawed in food and this tradition continued to the reign of the Rashidun Caliphs, so we find that their food was characterized by its simplicity and asceticism in life, and thus there were two kinds of food, one for the common people in which meat, bread and broth were served, while the other one id served for the Caliph in his own house, like in the reign of the Caliph Omar ibn al-Khattab.
She also added that the Umayyad state accompanied many developments resulting in new traditions and several decrees of food etiquette appeared at that era while in the time of the Abbasid Caliphate, the rulers were one of the most keen people to choose a tasty and delicious food, spend a lot of money in order to do so, even they did not miss out on the pleasure of eating and drinking, so they bought fruits, meat and birds from different countries.
