The Department of Biology at the College of Science held a lecture entitled “The use of bacteriocin in food preservation” in the presence of a number of undergraduate and postgraduate students, professors and those concerned with food affairs. The aim of the lecture was to spread a culture of health awareness among citizens regarding bacteriocins and how to use them in food preservatives to be an alternative to the chemicals currently used, as bacteriocin finds a wide range of applications, particularly in food preservation of various kinds such as Nisin, which has been allowed to be used in dairy products in many countries. The lecture was presented by the Assist. Prof. Dr. Walaa Shawkat Ali, including three main themes, the first included an introduction of the concept of food preservation and the importance of using bacteriocins as a food preservative.
