Abstract

The inhibitors of the alpha- amylase enzyme were investigated in the water extracts of a number of cereals and beans, after that, tested its  inhibitory activity towards the human saliva alpha- amylase ,the barley and broad bean harvest were selected as a source of these inhibitors. In order to obtain high–efficiency enzyme inhibitors, optimal conditions for extraction were studied and those extracts were subjected to purification and characterization. The efficiency of purified enzyme inhibitors was examined in inhibiting the growth of a number of molds which food contaminated and toxin production.
